Ingredients

  • 3 1/2 cups chopped rhubarb
  • 1 1/2 cups sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 2 tablespoons cherry, strawberry, or raspberry jello

Instructions

  1. In a saucepan over medium heat, combine rhubarb, sugar, cornstarch, and water.
  2. Cook until thick, stirring frequently.
  3. Remove from heat and add vanilla and dry jello.
  4. Stir until the jello is dissolved.
  5. Set aside to cool before serving.
