Ingredients

  • 5 to 6 lb. roast
  • 1/2 cup cracked bell pepper
  • 1 cup soy sauce
  • 3/4 cup vinegar
  • 1/2 teaspoon garlic powder
  • 1 small can tomato paste
  • 1 teaspoon paprika

Instructions

  1. Coat the roast with cracked bell pepper.
  2. Combine soy sauce, vinegar, garlic powder, tomato paste, and paprika; mix well.
  3. Place the roast in the marinade mixture.
  4. Turn once to coat the roast and marinate overnight in the refrigerator.
  5. Bake in the sauce at 300°F for 2 to 3 hours or until medium rare.
  6. Remove from oven and slice the roast.
  7. Pour the hot marinade over sliced roast before serving.
