Ingredients

  • 2 racks ribs
  • 1/2 cup tomato sauce
  • 1/2 cup cream of coconut
  • 4 tablespoons tarragon vinegar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ginger
  • 2 large cloves garlic
  • 3 tablespoons olive oil

Instructions

  1. Mix all ingredients in a medium-sized bowl.
  2. Place racks of ribs in a large Ziploc bag.
  3. Pour marinade over the ribs.
  4. Seal the bag.
  5. Place in the fridge for at least 4 hours, turning occasionally.
  6. Grill for 30 to 35 minutes, basting often and turning.
