Ingredients

  • 6 slices bacon
  • 1 (15 oz.) can black-eyed peas with jalapeno peppers
  • 1 (16 oz.) can stewed tomatoes
  • 2 cups uncooked instant rice
  • 1 medium onion, sliced

Instructions

  1. Fry the bacon until crispy.
  2. Remove the bacon from the pan and drain all but 2 tablespoons of oil.
  3. Add the black-eyed peas with jalapeno peppers, stewed tomatoes, uncooked instant rice, and sliced onion to the pan.
  4. Cook, stirring until all ingredients are well coated and heated through.
  5. Pour the mixture into a 9 x 13-inch baking dish.
  6. Crumble the cooked bacon over the top.
  7. Bake at 350°F for 30 minutes or until bubbly.
