Tater skins are crispy potato halves loaded with melted cheese, bacon bits, and topped with sour cream and green onions, perfect as a savory appetizer or snack.

Ingredients

  • 6 small potatoes
  • shredded Cheddar cheese
  • sour cream
  • bacon bits
  • green onions (green ends chopped)

Instructions

  1. Bake the potatoes in a microwave until done.
  2. Cut each potato in half and scoop out the middle, setting it aside.
  3. Fry the potato skins in a deep fat fryer until lightly brown.
  4. Place the fried skins on a pizza pan.
  5. Sprinkle cheese and bacon bits over the skins and bake at 350°F until the cheese melts.
  6. Remove from oven and add a dollop of sour cream and chopped green onions.
  7. Serve immediately.
