Instructions
- Bake the potatoes in a microwave until done.
- Cut each potato in half and scoop out the middle, setting it aside.
- Fry the potato skins in a deep fat fryer until lightly brown.
- Place the fried skins on a pizza pan.
- Sprinkle cheese and bacon bits over the skins and bake at 350°F until the cheese melts.
- Remove from oven and add a dollop of sour cream and chopped green onions.
- Serve immediately.
