Ingredients

  • 1 lb. lean ground beef
  • 1 tsp. salt
  • 3 Tbsp. minced yellow onion
  • 1/2 tsp. oregano
  • 1/4 tsp. rosemary
  • 1/2 c. uncooked rice
  • 2 Tbsp. vegetable oil
  • 2 (8 oz.) cans tomato sauce
  • 1 c. water

Instructions

  1. In a large bowl, combine ground beef, salt, minced onion, oregano, rosemary, and uncooked rice.
  2. Shape the mixture into 1 1/2-inch meatballs.
  3. Heat vegetable oil in a heavy 12-inch skillet over moderately low heat for about 1 minute.
  4. Add the meatballs to the skillet, uncovered, and turn frequently until browned on all sides, about 5 minutes.
  5. Add the tomato sauce and water to the skillet, then cover and simmer for 30 minutes.
  6. Serve the meatballs with a green salad and crusty Italian bread.
