Ingredients

  • 3 lb. fresh spinach, chopped
  • 6 green onions
  • 1 cup raw rice
  • 3 Tbsp. fresh dill weed
  • 2 cups water
  • salt and pepper to taste
  • olive oil or 1 or 2 Tbsp. butter

Instructions

  1. Sauté chopped green onions in olive oil or butter until fragrant.
  2. Add chopped spinach and cook until wilted.
  3. Stir in cooked rice, salt, pepper, dill weed, and water.
  4. Simmer for 15 to 18 minutes until flavors meld and liquid is absorbed.
