  • 2 tsp. red wine vinegar
  • 1 garlic clove
  • 1 to 2 drops hot sauce
  • 1/2 c. seltzer

  2. Cut 2 slices from cucumber and reserve for garnish.
  3. Pare and seed remaining cucumber, then cut into pieces.
  4. In a blender, combine cucumber, green pepper, onion, lime juice, vinegar, garlic, and hot sauce.
  5. Process on medium speed until smooth.
  6. Stir in seltzer.

Tips & Substitutions

For a creamier texture, add a ripe avocado to the blender. If you prefer a spicier kick, increase the hot sauce or add chopped jalapeño. For a more vibrant flavor, consider using organic vegetable juice. If you don’t have lime or lemon juice, vinegar can be used as a substitute. This gazpacho pairs wonderfully with the refreshing Melon Soup for a light summer meal.

Serving Suggestions

Serve the gazpacho in chilled bowls, garnished with the reserved cucumber slices and a sprinkle of fresh herbs like cilantro or parsley. It pairs well with crusty bread or as a refreshing starter to a meal. For a delightful meal, serve alongside a light salad or the flavorful Plantation Salad for added crunch.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will meld and improve over time. To enjoy it chilled again, simply stir and serve directly from the fridge. Avoid freezing, as the texture may become watery upon thawing.
