A creamy, cheesy layered rice casserole with green chilies, tomatoes, and onions, perfect for a comforting, flavorful meal that suits family dinners and casual gatherings.

Ingredients

  • 1 pt. sour cream
  • 1 (4 oz.) can chopped green chilies
  • 2 green onions, sliced
  • 4 c. cooked, salted white rice
  • 1 large tomato, sliced
  • 1/2 lb. grated Monterey Jack cheese

Instructions

  1. In a 2-quart casserole, layer half the cooked rice, half the sour cream mixed with the sliced green onions and chopped green chilies, and half the grated Monterey Jack cheese.
  2. Add all the tomato slices on top of the layered ingredients.
  3. Repeat the layering with the remaining rice, sour cream mixture, and cheese.
  4. Sprinkle with parsley or paprika for color after heating.
  5. Heat in a 350°F oven or microwave until heated through and cheese is melted.
