Rice Frittata

Ingredients

  • 1/2 c. finely chopped onions
  • 1 Tbsp. butter
  • 8 eggs*
  • 1/2 c. milk
  • 1 tsp. salt
  • 1 tsp. Worcestershire sauce
  • 4 to 5 drops hot pepper sauce
  • 2 c. cooked rice
  • 1 (4 oz.) can chopped green chilies, undrained
  • 1 medium tomato, chopped
  • 1/2 c. shredded Cheddar cheese

Instructions

  1. In a 10-inch skillet over medium heat, cook onions in butter until tender.
  2. Beat eggs with milk and seasonings.
  3. Stir in rice, chilies and tomato.
  4. Pour in pan.
  5. Reduce heat to medium-low. Cover.
  6. Cook until top is almost set, 12 to 15 minutes. Sprinkle with Cheddar cheese.
  7. Cover.
  8. Remove from heat.
  9. Let stand about 10 minutes.
  10. Serves 4.
