Ingredients

  • 1 (17 oz.) can sweet corn
  • 1/2 c. brown sugar
  • 3/4 c. sugar
  • 3 eggs
  • 1 c. oil
  • 1/2 c. raisins
  • 1/2 c. pecans, chopped
  • 2 1/4 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 tsp. baking powder

Instructions

  1. Preheat oven to 350°.
  2. In mixing bowl, mix corn, brown sugar and sugar.
  3. Beat eggs, one at a time.
  4. Add oil and beat well.
  5. Stir in raisins and nuts.
  6. Sift dry ingredients together.
  7. Add all liquids at once and stir until well blended.
  8. Pour into 9-inch pans or 9 x 15-inch dish.
  9. Bake 35 to 40 minutes or until tests done. If desired, frost with caramel frosting.
