Ingredients

  • 1 box lemon jello
  • 3/4 cup sugar
  • 2 small cans crushed pineapple (undrained)
  • 1 cup rice
  • 2 cups water
  • 1 pint whipping cream

Instructions

  1. Mix lemon jello, sugar, and crushed pineapple (undrained).
  2. Cook rice with water until tender.
  3. While hot, mix the cooked rice with the jello mixture.
  4. Thoroughly combine and refrigerate until set.
  5. Whip the whipping cream until thick and fold into the set jello mixture.
  6. Add miniature marshmallows if desired before serving.
