Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 cup Nabisco 100% bran cereal
  • 1 cup pumpkin
  • 3/4 cup skim milk
  • 1/3 cup light syrup
  • 2 egg whites
  • 1/2 cup raisins

Instructions

  1. Combine bran cereal, pumpkin, milk, corn syrup, and egg whites in a bowl and set aside.
  2. In a separate bowl, mix flour, sugar, salt, baking soda, and baking powder.
  3. Add the dry ingredients to the wet ingredients, stirring just until moistened.
  4. Fold in the raisins.
  5. Spray a 12-section muffin tin with cooking spray and evenly distribute the batter into each cup.
  6. Bake at 400°F (200°C) for 20 minutes or until a toothpick inserted into the center comes out clean.
