Ingredients

  • 3/4 cup crushed pineapple, drained
  • 2 tablespoons lemon juice
  • 1/3 cup sugar
  • dash of salt
  • 1 cup heavy cream, whipped
  • 2 cups cooked rice
  • 1/2 cup shredded coconut

Instructions

  1. Combine crushed pineapple, lemon juice, sugar, and salt in a bowl.
  2. Fold the pineapple mixture into the whipped cream.
  3. Fold in cooked rice and shredded coconut.
  4. Pour the mixture into a 9 x 9 x 2-inch pan.
  5. Chill in the refrigerator before serving.
