A light and fruity rice mousse combining sweet pineapple, marshmallows, and whipped cream, perfect as a refreshing dessert for gatherings or family dinners.

Ingredients

  • 1 cup rice
  • 1 cup crushed pineapple
  • 1/2 pound small marshmallows
  • whipped cream
  • maraschino cherries

Instructions

  1. Cook the rice according to the package directions and allow it to cool.
  2. Drain the crushed pineapple and add it to the cooled rice.
  3. Stir in the small marshmallows until well combined.
  4. Chop the maraschino cherries and fold them into the mixture.
  5. Gently fold in whipped cream.
  6. Serve chilled, garnished with additional whipped cream and maraschino cherries if desired.
