Ingredients

  • 1/2 cup chopped onions
  • 3 tablespoons butter
  • 4 cups cooked rice
  • 1 small jalapeno pepper, finely ground (optional)
  • 1 3/4 cups sour cream
  • 1/2 pound cottage cheese
  • 1/2 pound grated Longhorn cheese
  • 1/2 bay leaf, crumbled
  • 1 can whole Ortega chili peppers, halved
  • salt to taste

Instructions

  1. Saute chopped onions in butter until light brown.
  2. Add cooked rice, ground jalapeno (if used), cottage cheese, Longhorn cheese, and crumbled bay leaf to the onions and butter.
  3. Layer the rice mixture and halved Ortega chili peppers alternately in a greased casserole dish to form 4 layers.
  4. Bake in a 375°F oven for 25 minutes.
  5. Top with 1/2 cup grated Longhorn cheese.
  6. Bake for an additional 10 minutes until cheese is melted and bubbly.
