- Saute chopped onions in butter until light brown.
- Add cooked rice, ground jalapeno (if used), cottage cheese, Longhorn cheese, and crumbled bay leaf to the onions and butter.
- Layer the rice mixture and halved Ortega chili peppers alternately in a greased casserole dish to form 4 layers.
- Bake in a 375°F oven for 25 minutes.
- Top with 1/2 cup grated Longhorn cheese.
- Bake for an additional 10 minutes until cheese is melted and bubbly.
