Ingredients

  • 6 cups cooked rice
  • 1/2 cube butter or margarine
  • 2 1/2 cups sugar
  • 1 capful lemon extract
  • 8 to 10 beaten eggs
  • 2 large cans evaporated milk
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup raisins (optional)

Instructions

  1. Mix all ingredients in a bowl.
  2. Pour into a greased 13 x 9-inch pan.
  3. Bake at 350°F for 35 to 40 minutes until set and golden.
