Ingredients

  • 1/8 cup sugar
  • 1/2 cup corn oil
  • 1 teaspoon salt
  • 1 cup starter
  • 1 1/2 cups warm water
  • 6 cups flour
  • 1/4 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 3 eggs
  • 1 cup oil
  • 1 1/3 cups sugar
  • 2 teaspoons vanilla
  • 2 cups shredded zucchini
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon

Instructions

  1. Beat eggs, oil, sugar, vanilla, and shredded zucchini together in a mixing bowl.
  2. Add flour, baking powder, and cinnamon to the mixture and stir until well combined.
  3. Pour the batter into two greased loaf pans or four small greased loaf pans.
  4. Bake at 350°F (175°C) for about 1 hour if using large pans, or less time for smaller pans, until a toothpick inserted into the center comes out clean.
