Ingredients

  • 1/3 cup uncooked long grain rice
  • 1/4 cup water
  • 2 cups skim milk
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • egg substitute equivalent to 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup raisins
  • cinnamon to taste

Instructions

  1. Combine rice, water, 1 1/2 cups skim milk, sugar, and salt in a saucepan.
  2. Bring to a boil while stirring constantly.
  3. Reduce heat, cover, and simmer about 25 minutes or until rice is tender.
  4. Combine remaining skim milk, egg substitute, and vanilla; beat slightly.
  5. Add to cooked rice and continue cooking over low heat until thick and creamy, about 10 minutes.
  6. Fold in raisins.
  7. Spoon into dessert dishes and sprinkle with cinnamon.
