Ingredients

  • 1 1/2 cups milk
  • 1/3 cup sugar
  • 1 tablespoon salt
  • 1/2 cup shortening
  • 1 package (1/4 oz.) dry yeast
  • 1/4 cup warm water
  • 1 cup cooked rice
  • 2 eggs
  • 5 to 6 cups flour

Instructions

  1. Scald the milk, then stir in sugar, salt, and shortening.
  2. Cool the mixture to lukewarm temperature.
  3. Dissolve the dry yeast in warm water.
  4. Add the cooked rice to the milk mixture.
  5. Incorporate the yeast mixture and eggs into the rice and milk.
  6. Add about half of the flour and stir until well combined.
  7. Gradually add enough of the remaining flour to make a very stiff dough that leaves the sides of the bowl.
  8. Knead the dough until smooth.
  9. Place the kneaded dough in a large greased bowl.
  10. Grease the top of the dough.
  11. Cover the bowl with plastic wrap or foil and refrigerate for at least 12 hours.
  12. Remove the dough from the refrigerator 2 to 3 hours before serving and shape into rolls.
  13. Let the shaped rolls rise, then bake at 400°F for 12 to 15 minutes until golden brown.
