Glazed Wild Duck

Ingredients

  • 2 (2 lb.) ducks
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. orange juice concentrate
  • 2 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1/2 tsp. ginger
  • 1/4 tsp. allspice or cinnamon

Instructions

  1. Combine all ingredients except duck and onions to form the glaze.
  2. Pour the glaze over the duck.
  3. Place onion rings over the duck.
  4. Roast in a shallow pan at 400°F for 1 hour.
  5. Baste the duck often during roasting.
  6. Season to taste before serving.
