Ingredients

  • 1 cup cooked rice
  • 3 eggs
  • 1/4 pound Cheddar cheese, grated
  • 2 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Separate the eggs; beat the egg whites until they form stiff peaks.
  2. In a separate bowl, combine the egg yolks, cold cooked rice, milk, and grated Cheddar cheese.
  3. Gently fold the beaten egg whites into the rice mixture.
  4. Butter a baking dish and gently spoon the mixture into it.
  5. Bake at 300°F (150°C) for 30 to 40 minutes or until the top is golden brown.
