Ingredients

  • 3 egg whites
  • 3/4 cup sugar
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon vanilla
  • 1/2 cup skim milk
  • 1 tablespoon margarine
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon lite salt
  • 1/4 teaspoon ground nutmeg
  • 6 cups fresh fruit, sliced (such as strawberries, peaches, kiwi, mango)

Instructions

  1. Cut a piece of waxed paper to fit the bottom of a 9-inch square baking pan.
  2. Lightly oil the pan sides and the paper.
  3. Preheat the oven to 350°F (175°C).
  4. In a mixer, beat together egg whites, sugar, orange peel, and vanilla until light and fluffy.
  5. In a small saucepan, heat the skim milk and margarine until hot, then stir into the egg mixture.
  6. In a bowl, stir together the flour, baking powder, lite salt, and ground nutmeg.
  7. Add the dry ingredients to the batter and stir to blend well.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake in the preheated oven for approximately 35 minutes or until golden and a toothpick inserted in the center comes out clean.
  10. Allow to cool slightly before serving with sliced fresh fruit on top.
