A flavorful baked rice dish featuring tender chicken, saffron-infused rice, melted cheese, and creamy mayonnaise, perfect for comforting family dinners or special occasions.

Ingredients

  • chicken broth
  • mozzarella cheese
  • saffron
  • uncle ben rice
  • mayonnaise
  • chicken

Instructions

  1. Boil chicken parts in water; remove from pot, reserving broth.
  2. Cool and debone the chicken.
  3. Break the chicken into large pieces and set aside.
  4. Cook rice in chicken broth and water, adding saffron, until thoroughly done.
  5. Taste the liquid and season with additional salt if necessary.
  6. Place half of the cooked rice in a casserole dish.
  7. Spread the chicken over the layer of rice.
  8. Top with the remaining rice.
  9. Spread mayonnaise over the top layer of rice.
  10. Cover with mozzarella cheese.
  11. Bake in a 350°F oven until the cheese is almost melted.
  12. Serve and enjoy!
