Instructions
- Boil chicken parts in water; remove from pot, reserving broth.
- Cool and debone the chicken.
- Break the chicken into large pieces and set aside.
- Cook rice in chicken broth and water, adding saffron, until thoroughly done.
- Taste the liquid and season with additional salt if necessary.
- Place half of the cooked rice in a casserole dish.
- Spread the chicken over the layer of rice.
- Top with the remaining rice.
- Spread mayonnaise over the top layer of rice.
- Cover with mozzarella cheese.
- Bake in a 350°F oven until the cheese is almost melted.
- Serve and enjoy!
