Ingredients

  • 1/2 cake yeast
  • 1 1/2 lb rice
  • 2 oz crushed ginger
  • 1/4 lb raisins
  • 4 lb brown sugar
  • 1/4 pt rum
  • juice of 2 lemons
  • 1 gal water

Instructions

  1. Place all ingredients in a large jar.
  2. Leave for 14 days to ferment.
  3. Strain the liquid and bottle it.
  4. Cover tightly and store in a cool, dark place.
