Ingredients

  • 5 cups water
  • 1 1/2 cups arborio rice
  • 1 tablespoon salt
  • 3 eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup freshly grated Parmesan
  • freshly milled white pepper

Instructions

  1. Bring water to a boil in a large saucepan.
  2. Meanwhile, in a bowl or pitcher with a pouring spout, combine rice and salt.
  3. Over high heat, pour rice into boiling water in a slow, steady stream so as not to break the boil.
  4. Reduce heat to medium and simmer uncovered until rice is cooked, about 12 to 15 minutes.
  5. Do not stir during cooking.
