Ingredients

  • 8 eggs, separated
  • 1 1/2 cups sugar
  • 1/3 cup water
  • 2 teaspoons vanilla
  • 1 1/3 cups cake flour
  • pinch of salt
  • 3/4 teaspoon cream of tartar

Instructions

  1. Preheat oven to 350°F (moderate temperature).
  2. Beat egg yolks, sugar, water, and vanilla until thick and light.
  3. Add cake flour to the yolk mixture and fold gently.
  4. Have egg whites at room temperature.
  5. Beat egg whites and a pinch of salt until foamy.
  6. Add cream of tartar and continue beating until whites are stiff.
  7. Fold the beaten egg whites into the yolk mixture gently.
  8. Place the batter in an ungreased 10-inch tube pan and cover with brown paper.
  9. Bake for 15 minutes; remove paper and bake for an additional 45 minutes.
  10. Invert the pan until the cake is completely cool before removing.
