Ingredients

  • 1 hen or enough chicken to make 3 cups meat
  • 2 large green peppers, chopped
  • 1 stick oleo
  • 1 (14 oz.) package vermicelli
  • 1 large onion, chopped
  • 1 can Ro-Tel tomatoes
  • 1/2 lb Velveeta cheese
  • 1 can petite English peas
  • 1 can button mushrooms
  • 2 Tbsp Worcestershire sauce

Instructions

  1. Season and cook the chicken to obtain 1 1/2 quarts of broth. Strain the broth and cook the vermicelli in it.
  2. Add the Velveeta cheese and melt it into the broth and vermicelli mixture.
  3. Stir in the Ro-Tel tomatoes, Worcestershire sauce, drained peas, and mushrooms.
  4. Season with salt and pepper to taste.
  5. Add deboned chicken, cut into bite-sized pieces, and place into a casserole dish.
  6. Bake in a moderate oven at 300°F (150°C) for 20 minutes.

Tips & Substitutions

For a creamier texture, consider adding a splash of heavy cream after melting the Velveeta. If you can't find Ro-Tel tomatoes, diced tomatoes with green chilies work well as a substitute. You can also use whole wheat vermicelli for a healthier option. To save time, use rotisserie chicken instead of cooking your own.

Serving Suggestions

Serve Mrs. G.'s Chicken Rotel with a side of garlic bread for a delightful touch. A fresh green salad pairs nicely to balance the richness of the dish. For a heartier meal, consider serving with Baked Parmesan Cottage Potatoes, which complement the flavors beautifully.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a preheated oven at 350°F (175°C) for 20-25 minutes until heated through, or microwave individual portions on medium heat until warm. Avoid reheating multiple times to maintain quality.
