Ingredients

  • 10 large potatoes, peeled and quartered
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 6 tablespoons butter, divided
  • 2 tablespoons dried minced onion
  • 1/2 to 1 teaspoon salt
  • paprika

Instructions

  1. Place potatoes in a Dutch oven or large kettle; cover with water and bring to a boil.
  2. Reduce heat; cover and cook for 20 to 25 minutes or until potatoes are tender.
  3. Drain and place in a bowl; mash.
  4. Add sour cream, cream cheese, 4 tablespoons of butter, minced onion, and salt; stir until smooth and the cream cheese and butter are melted.
  5. Spread the mashed potatoes in a greased 13 x 9 x 2 inch baking dish.
  6. Melt the remaining butter and drizzle over the potatoes.
  7. Sprinkle with paprika.
  8. Bake at 350°F for 40 minutes; uncover and bake 20 minutes longer.
