Ricotta Omelet

Ingredients

  • 1/4 c. chopped, cooked chicken or turkey
  • 1/2 c. fresh pineapple
  • 1/2 c. low-fat Ricotta cheese
  • 1 tsp. butter
  • 3 eggs
  • 2 tsp. low-fat milk
  • chopped parsley

Instructions

  1. Combine chicken or turkey, pineapple and Ricotta cheese.
  2. In nonstick pan, melt butter.
  3. Beat eggs and milk together and pour into pan.
  4. Allow omelet to cook around sides and middle.
  5. Put Ricotta cheese mixture on eggs.
  6. Fold over one side of omelet and continue to cook until eggs are done and not runny.
  7. Sprinkle parsley on top of omelet and serve.
