Ricotta Omelet

Instructions
- Combine chicken or turkey, pineapple and Ricotta cheese.
- In nonstick pan, melt butter.
- Beat eggs and milk together and pour into pan.
- Allow omelet to cook around sides and middle.
- Put Ricotta cheese mixture on eggs.
- Fold over one side of omelet and continue to cook until eggs are done and not runny.
- Sprinkle parsley on top of omelet and serve.
