Ingredients

  • 8 Tbsp. unsalted butter
  • 1 large leek, sliced (white part only)
  • 4 plum tomatoes, diced
  • 1/2 cup dry vermouth
  • 8 oz. dried rigatoni
  • 6 oz. cooked crabmeat

Instructions

  1. Melt 1 tablespoon of butter in a large, heavy skillet over low heat.
  2. Add the sliced leek and cook until tender, stirring occasionally, about 8 minutes.
  3. Add the diced tomatoes and stir for 1 minute.
  4. Increase heat to high and add the dry vermouth; boil until the liquid is reduced by one-third, about 5 minutes, stirring frequently.
  5. Set the sauce aside and cook the rigatoni according to package instructions until al dente.
  6. Drain the rigatoni and toss with the sauce.
  7. Gently fold in the cooked crabmeat.
  8. Serve immediately, garnished with additional herbs if desired.
