Ingredients

  • 70 Ritz crackers
  • 1 small can coconut
  • 1 1/2 cups chopped pecans
  • 1 stick butter
  • 2 packages instant vanilla pudding
  • 1 1/2 cups milk
  • 1/2 gallon vanilla ice cream

Instructions

  1. Mix crushed Ritz crackers, coconut, chopped pecans, and melted butter together to form the crust.
  2. In a separate bowl, mix the ice cream, milk, and instant vanilla pudding until smooth.
  3. Pour the pudding mixture over the crust and refrigerate until the filling is chilled.
  4. Top the chilled dessert with Cool Whip.
  5. Keep the dessert in the freezer until one hour before serving, then transfer to the refrigerator.
  6. Use a glass pan for serving.
