Sweet, crunchy Ritz crackers topped with a rich date and pecan spread, coated with a vanilla glaze, perfect for snacking or holiday treats.

Ingredients

  • 1 can Eagle Brand milk
  • 1 cup chopped dates
  • 1 pound Ritz crackers
  • 1/2 stick oleo
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • a dash of milk

Instructions

  1. Heat Eagle Brand milk and chopped dates until the dates are melted, stirring constantly.
  2. Add pecans to the mixture.
  3. Spread the date and pecan mixture onto the Ritz crackers.
  4. Bake the crackers with the spread for 5 to 8 minutes at 325°F, watching closely to prevent scorching.
  5. Remove from oven and let cool.
  6. Melt half a stick of oleo (butter).
  7. Add powdered sugar and vanilla to the melted oleo, stirring until smooth.
  8. Add a dash of milk if necessary to achieve spreading consistency.
  9. Spread the glaze over the cooled crackers.
  10. Allow to dry before serving.
