- With a hand-held electric mixer, beat peanut butter, butter, and vanilla until smooth.
- Gradually beat in confectioners sugar and flour until well blended.
- Shape the mixture into 1-inch balls; place on wax paper-lined cookie sheet and refrigerate for 1 hour or until firm.
- Melt chocolate chips; dip each peanut butter ball into the melted chocolate using a toothpick to cover most of it.
- Place the chocolate-covered balls on a cookie sheet, chocolate side down, and smooth over or fill in gaps with more chocolate if necessary.
- Refrigerate the buckeyes for about 15 minutes longer or until the chocolate is set.
- Store buckeyes tightly covered in the refrigerator.
