Ingredients

  • 1 c. creamy peanut butter
  • 1/4 c. butter
  • 1 tsp. vanilla extract
  • 1/2 c. confectioners sugar
  • 1/2 c. all-purpose flour
  • 1 c. semi-sweet chocolate chips

Instructions

  1. With a hand-held electric mixer, beat peanut butter, butter, and vanilla until smooth.
  2. Gradually beat in confectioners sugar and flour until well blended.
  3. Shape the mixture into 1-inch balls; place on wax paper-lined cookie sheet and refrigerate for 1 hour or until firm.
  4. Melt chocolate chips; dip each peanut butter ball into the melted chocolate using a toothpick to cover most of it.
  5. Place the chocolate-covered balls on a cookie sheet, chocolate side down, and smooth over or fill in gaps with more chocolate if necessary.
  6. Refrigerate the buckeyes for about 15 minutes longer or until the chocolate is set.
  7. Store buckeyes tightly covered in the refrigerator.
