Ingredients

  • 1 lb onions
  • 3 to 4 lb beef pot roast (blade, round, rump or chuck)
  • 2 Tbsp paprika
  • 1 tsp salt
  • 1/8 tsp pepper
  • 3 Tbsp fat

Instructions

  1. Cut off root ends and a thin slice from stem ends of onions. Peel and rinse; slice thinly and set aside.
  2. Wipe meat with a damp cloth.
  3. Coat the meat evenly with a mixture of paprika, salt, and pepper.
  4. Heat fat in a saucepan or Dutch oven with a tight-fitting cover.
  5. Brown the meat on all sides slowly over medium heat.
  6. Lift the meat out of the pan.
  7. Layer the sliced onions into the pot and place the meat over the onions. Cover tightly.
  8. Cook over low heat for about 3 hours or until the meat is tender.
  9. Serve with the gravy over rice or mashed potatoes.
