Instructions

  1. Coat both inside and outside of the Cornish hen with extra virgin olive oil.
  2. Apply salt, pepper, and chili powder inside and outside of the hen.
  3. Roast on a roasting rack or pan with rack at 425°F for 45 to 50 minutes.
  4. Check doneness by removing a leg and ensuring clear liquid runs out.
  5. Adjust roasting time depending on the number of hens cooked.
