Ingredients

  • 1 whole lamb leg (about 5 lb.)
  • 2 or 3 garlic cloves, slivered
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup butter or margarine, melted
  • 2 lemons
  • grape leaves, if desired
  • Greek-style peppers, if desired

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make slits in the meat with the tip of a sharp knife.
  3. Insert slivers of garlic into the slits.
  4. Rub the surface of the meat with salt and pepper.
  5. Place the meat, fat side up, on a rack in an open shallow roasting pan.
  6. Brush the meat with melted butter.
  7. Squeeze lemon juice over the meat.
  8. Insert a meat thermometer so the tip is in the thickest part of the meat without touching bone or resting in fat.
  9. Roast uncovered until the thermometer registers 175°F (about 3 hours).
  10. Allow the meat to stand for 15 to 20 minutes before carving.
  11. Line a platter with grape leaves and arrange the lamb and peppers on top.
