Roasted Bell Pepper Appetizer*

Instructions
- Cut the bell peppers in half and discard the seeds.
- Flatten the pepper halves with the palm of your hand and place skin side up on a cookie sheet.
- Broil the peppers until charred, then place them in a Ziploc bag for 15 minutes.
- Peel the peppers and slice into 1/2-inch strips.
- Place the pepper strips in a bowl with the remaining ingredients and mix well.
- Serve at room temperature or store in the refrigerator.
- Serve on individual plates on a bed of lettuce or as an hors d'oeuvre with thin slices of French bread or crackers.
