Roasted Bell Pepper Appetizer*

A vibrant appetizer featuring charred bell peppers with garlic, capers, and Parmesan, perfect for sharing at gatherings or enjoyed as a light, flavorful starter.

Ingredients

  • 6 bell peppers (any combination of red, green, yellow, and orange)
  • 3 Tbsp. olive oil
  • 3 garlic cloves, minced
  • 1 Tbsp. red wine vinegar or cider vinegar
  • 1 Tbsp. grated Parmesan cheese
  • 1 Tbsp. bottled capers, drained

Instructions

  1. Cut the bell peppers in half and discard the seeds.
  2. Flatten the pepper halves with the palm of your hand and place skin side up on a cookie sheet.
  3. Broil the peppers until charred, then place them in a Ziploc bag for 15 minutes.
  4. Peel the peppers and slice into 1/2-inch strips.
  5. Place the pepper strips in a bowl with the remaining ingredients and mix well.
  6. Serve at room temperature or store in the refrigerator.
  7. Serve on individual plates on a bed of lettuce or as an hors d'oeuvre with thin slices of French bread or crackers.
