  • adobo to taste
  • 2 tsp. oregano

  4. Place the chicken, breast side down, in a large pan that can also hold the potatoes.

  7. Cook the chicken in the oven for 1 hour and 30 minutes, setting a timer when it is placed in the oven.

Tips & Substitutions

For a crispy skin, consider patting the chicken dry before seasoning. If you don't have adobo, a blend of garlic powder, onion powder, and paprika can work as a substitute. If you're short on time, use store-bought rotisserie chicken and pair it with roasted potatoes for a quick meal. For added flavor, try adding herbs like thyme or rosemary to the butter.

Serving Suggestions

Serve the roasted chicken with the golden potatoes alongside a fresh salad or steamed vegetables for a complete meal. This dish pairs beautifully with Chilled Potato Soup for a refreshing contrast. For a heartier option, consider serving with Homemade Chicken Dumplings or a side of Pilaf to soak up the delicious juices.

Storage & Reheating

Leftover roasted chicken can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 20 minutes or until heated through. For a quick option, microwave in intervals until warm, but be cautious to avoid drying it out.

Frequently Asked Questions

Can I use a different type of meat for this recipe?

Yes, you can use other meats such as turkey or a whole duck. Adjust cooking times accordingly, as these meats may require longer or shorter cooking times. Always ensure that the internal temperature reaches a safe level.

What can I do if my chicken skin isn't crispy?

If your chicken skin isn't crispy, try increasing the oven temperature to 400°F (200°C) for the last 15-20 minutes of cooking. This will help render any remaining fat and crisp up the skin. Ensure to keep an eye on it to prevent burning.

Can I add vegetables to the roasting pan?

Absolutely! Carrots, onions, and garlic cloves work well when added to the pan with the chicken and potatoes. They will absorb the flavors and enhance the overall dish. Just make sure the vegetables are cut into similar sizes for even cooking.
