Ingredients

  • 8 boneless chicken breast halves
  • 1 (6 oz.) pkg. chicken flavored stuffing mix
  • 1 1/2 cups water
  • 1/4 cup melted butter
  • 1 cup raisins
  • 1 cup ground pecans
  • grated rind from 2 oranges or 2 tablespoons dried orange peel
  • 2 tablespoons sugar
  • 24 slices bacon

Instructions

  1. Remove skin from chicken breasts.
  2. Pound chicken between two pieces of waxed paper to 1/4-inch thickness. Remove waxed paper.
  3. In a large bowl, combine stuffing mix, water, melted butter, and raisins. Mix thoroughly.
  4. Place 1/3 cup of stuffing mixture on each chicken breast.
  5. Fold the ends of the chicken over the stuffing. Wrap each chicken bundle with 3 slices of bacon.
  6. Combine ground pecans, grated orange rind, and sugar in a pie plate. Roll each chicken in the nut mixture.
  7. Place the chicken on a baking sheet. Sprinkle remaining nut mixture over the top.
  8. Bake in a 350°F oven for 40 to 45 minutes.
