Chicken Fanfare

- Remove skin from chicken breasts.
- Pound chicken between two pieces of waxed paper to 1/4-inch thickness. Remove waxed paper.
- In a large bowl, combine stuffing mix, water, melted butter, and raisins. Mix thoroughly.
- Place 1/3 cup of stuffing mixture on each chicken breast.
- Fold the ends of the chicken over the stuffing. Wrap each chicken bundle with 3 slices of bacon.
- Combine ground pecans, grated orange rind, and sugar in a pie plate. Roll each chicken in the nut mixture.
- Place the chicken on a baking sheet. Sprinkle remaining nut mixture over the top.
- Bake in a 350°F oven for 40 to 45 minutes.
