Ingredients

  • 2 whole pork tenderloins, trimmed
  • 3 Tbsp. butter or margarine
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup apple jelly or apricot jam
  • 1/2 cup apple juice
  • 1/4 cup Dijon mustard
  • 1 Tbsp. cornstarch
  • 1 Tbsp. light cream

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Heat a large heavy skillet over medium heat and add butter.
  3. Add pork tenderloins to the skillet and sear on all sides.
  4. Place the seared pork in a shallow baking pan.
  5. Sprinkle the pork with salt and pepper.
  6. Add apple jelly, apple juice, and Dijon mustard to the pan drippings.
  7. Cook over low heat, stirring until well blended, about 5 minutes.
  8. Spoon the sauce over the pork.
  9. Roast the pork for 50 minutes, basting every 10 minutes with pan juices.
  10. Remove from oven and cut into 1 1/2 inch slices.
  11. Arrange the slices on a serving dish and keep warm.
  12. Blend cornstarch with light cream.
  13. Place the baking pan on the stove top over low heat.
  14. Stir the cornstarch mixture into the pan juices.
  15. Cook, stirring until thickened, about 2 minutes.
  16. Serve the sauce over the sliced pork.
