Rich and chewy Rocky Road candy combines creamy chocolate, marshmallows, coconut, and crunchy walnuts for a delightful treat perfect for sharing or gifting.

Ingredients

  • 2 c. semi-sweet chocolate chips
  • 2 1/4 c. miniature marshmallows
  • 1/4 c. flaked coconut
  • 1/2 c. coarsely chopped walnuts

Instructions

  1. Line an 8-inch square pan with foil.
  2. Grease the foil with butter.
  3. In the top of a double boiler, melt the chocolate over barely simmering water, stirring constantly.
  4. Remove from the hot water and stir in the marshmallows, coconut, and walnuts.
  5. Pour the candy into the prepared pan and spread it into an even layer with a spatula.
  6. Chill in the refrigerator for about 3 hours, or until the candy is firm.
  7. Remove the candy from the pan.
  8. Peel off the foil and, using a sharp knife, cut the candy into 1-inch squares.
