Ingredients

  • 2 cartons ricotta cheese
  • 1 (8 oz.) package shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 eggs
  • salt to taste
  • pepper to taste
  • 1/2 cup chopped parsley

Instructions

  1. Mix the ricotta cheese, shredded mozzarella, grated Parmesan cheese, eggs, salt, pepper, and chopped parsley together in a bowl.
  2. Cut the partially cooked lasagna noodles in half.
  3. Fill each half with about one heaping tablespoon of the cheese mixture and roll up.
  4. Spread spaghetti sauce on the bottom of a large oiled lasagna dish.
  5. Place the filled lasagna rolls seam side down into the sauce.
  6. Sprinkle the rolls with additional Parmesan cheese.
  7. Cover the dish with foil and bake at 350°F (175°C) for 45 minutes.
