Ingredients

  • 2 cans drained corn
  • 3 slices jalapenos, finely chopped
  • 1/2 cup chopped bacon bits
  • 1 cup grated Colby or Cheddar cheese
  • 1 small can cream-style corn
  • 2 eggs

Instructions

  1. Preheat oven to 400°F.
  2. In a mixing bowl, combine the drained cans of corn, finely chopped jalapenos, chopped bacon bits, cream-style corn, and eggs.
  3. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into a greased baking pan.
  5. Bake in the preheated oven for 30 minutes.
  6. Remove from oven and sprinkle grated cheese over the top.
  7. Return to the oven for a few minutes until the cheese is melted and bubbly.
  8. Serve warm.
