Ingredients

  • 4 oz. cream cheese, softened
  • 2 oz. Roquefort or Blue cheese, crumbled
  • 2 oz. sharp Cheddar cheese, shredded
  • 1 Tbsp. dry white wine or dry vermouth
  • 1/4 tsp. dry mustard
  • green onions
  • 1/2 c. finely chopped walnuts
  • fresh parsley sprigs

Instructions

  1. In a small mixing bowl at low speed, beat the cheeses for 2 minutes.
  2. Add green onions, optional wine or vermouth, and mustard. Beat at medium speed for 3 minutes or until fluffy.
  3. Cover and chill the mixture for 2 hours.
  4. With wet hands, shape the mixture into a 3-inch ball and roll in chopped walnuts.
  5. Decorate with parsley sprigs and serve with crackers.
