Ingredients

  • 1 1/2 cups apple cider vinegar
  • 2 3/4 cups sugar
  • 1 tablespoon salt
  • 1 (3-inch) stick cinnamon
  • 2 tablespoons mustard seed
  • 8 whole cloves
  • 2 cups ripe, chopped, peeled tomatoes
  • 2 cups tart apples, peeled and chopped
  • 1 cup celery, chopped fine
  • 1 cup green bell pepper, chopped

Instructions

  1. Combine vinegar, sugar, salt, cinnamon, mustard seed, cloves, and red coloring in a large pot and bring to a rapid boil.
  2. Add chopped tomatoes, tart apples, celery, and bell pepper to the boiling mixture.
  3. Reduce heat and simmer until the fruit and vegetables thicken and become clear, stirring often to prevent scorching.
  4. Remove from heat and let cool slightly before transferring to hot, sterilized jars.
  5. Seal the jars and let the relish sit for a day before using to allow flavors to meld.
