Instructions

  1. Cut the round steak into cubed pieces or strips.
  2. Spray a skillet with cooking spray or add a little oil, then brown the meat.
  3. Add chopped onions and bell peppers to the skillet with the meat.
  4. Season with garlic, salt, and pepper, then let simmer for 20 to 30 minutes.
  5. Drain excess oil from the skillet.
  6. Add the can of Ro-Tel tomatoes and two cans of diced tomatoes to the skillet.
  7. Simmer all ingredients together for about 1 hour or less.
  8. Drain the Ro-Tel and tomatoes, if desired.
  9. Serve the beef mixture over rice.
