Ingredients

  • 1 lb. flounder fillets
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. salad dressing
  • 2 Tbsp. chopped chives
  • 1 Tbsp. lemon juice
  • pinch of salt
  • 1 egg white
  • 1/4 c. saltine cracker crumbs

Instructions

  1. Sprinkle the fillets with salt and pepper.
  2. Arrange the fillets in a lightly greased 13 x 9 x 2-inch pan.
  3. Bake at 350°F for 10 minutes.
  4. Remove the fillets with a slotted spatula and place on a heated ovenproof platter to keep warm.
