Ingredients

  • 2 1/2 cups sifted flour
  • 1/3 cup sugar
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 5 cups whole wheat flour
  • 1 cup margarine
  • 2 eggs
  • 2 1/4 cups buttermilk

Instructions

  1. Sift the regular flour, sugar, soda, and salt 3 or 4 times.
  2. Stir in the whole wheat flour.
  3. Cut in the margarine until the mixture resembles fine crumbs.
  4. Beat the eggs until frothy.
  5. Mix the eggs with the buttermilk and gradually add to the dry ingredients.
  6. Mix with a fork until a stiff dough forms.
  7. Knead on a floured board for 20 to 30 quick motions.
  8. Divide the dough into 2 balls.
  9. Place the balls well apart on a greased cookie sheet.
  10. Cut an 'X' about 1/2-inch deep in the top of each loaf.
  11. Bake at 400°F (200°C) for 45 to 50 minutes.
  12. Let stand about 30 minutes before serving for the best flavor.
  13. Slice in thick slices.
