Ingredients

  • 1 graham cracker shell
  • 6 egg yolks
  • 1 cup sugar
  • 1 tablespoon gelatin
  • 1/2 cup cold water
  • 1 pint heavy whipping cream
  • 1/4 cup rum or brandy

Instructions

  1. Beat the egg yolks and sugar together until well combined.
  2. Soak the gelatin in cold water, then heat over a flame until boiling.
  3. Add nutmeg to the gelatin mixture.
  4. Slowly pour the gelatin mixture into the egg and sugar mixture, stirring constantly.
  5. Mix the filling well until smooth.
  6. In a separate bowl, beat the heavy whipping cream until stiff peaks form and then add the rum or brandy.
  7. Fold the whipped cream into the egg yolk mixture gently.
  8. Pour the filling into the graham cracker shell and chill until set.
  9. Sprinkle with shaved chocolate before serving.
